Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 1 cup black beans rinsed and drained
  • 1 cup corn frozen or canned
  • 1 red bell pepper diced
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped
  • ½ cup Greek yogurt
  • ¼ cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine chicken, black beans, corn, red bell pepper, cherry tomatoes, avocado, red onion, and cilantro.
  • In a small bowl, mix Greek yogurt, mayonnaise, lime juice, chili powder, cumin, salt, and pepper.
  • Pour the dressing over the salad and toss gently to coat.
  • Serve immediately or refrigerate for up to 2 hours for flavors to blend.
