Ingredients
  

For the Shrimp

  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ¼ teaspoon garlic powder
  • Salt and pepper to taste

For the Bowls

  • 2 cups cooked rice, white or brown
  • 1 ripe avocado, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • ¼ cup chopped cilantro

For the Cilantro Lime Sauce

  • ½ cup sour cream or Greek yogurt
  • ¼ cup chopped cilantro
  • 2 tablespoon lime juice
  • 1 tablespoon water
  • ¼ teaspoon salt
  • Pinch black pepper

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add shrimp, chili powder, cumin, garlic powder, salt, and pepper. Cook until shrimp are pink, about 5-7 minutes.
  • In a mixing bowl, combine sour cream, cilantro, lime juice, water, salt, and black pepper. Mix well.
  • To serve, layer cooked rice, shrimp, avocado, cherry tomatoes, red onion, and cilantro. Drizzle with cilantro lime sauce.

Notes

You can add more vegetables such as bell peppers or corn for extra flavor.
