Ingredients
  

For the Corn

  • 6 ears corn, husked

For the Sauce

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 ¼ cups whole milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon smoked paprika
  • 1 ½ cups shredded sharp white cheddar cheese
  • 2 tablespoons chopped fresh chives

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant.
  • Add the flour to the saucepan and stir to form a roux. Gradually whisk in the whole milk, stirring until thickened.
  • Stir in the salt, black pepper, smoked paprika, and shredded cheddar cheese until melted.
  • Cut the corn kernels off the cob and combine them with the cheese sauce.
  • Transfer the mixture to a baking dish and bake for 30 minutes.
  • Garnish with chopped chives before serving.

Notes

You can adjust the seasoning according to your taste. For a spicier version, add some cayenne pepper.
