Ingredients
  

Lentils

  • 1 cup lentils brown or green lentils work best

Base Ingredients

  • 1 tablespoon olive oil for sautéing
  • 1 medium onion, chopped provides base flavor
  • 3 cloves garlic, minced for robust flavor

Liquid Ingredients

  • 1 can (14.5 oz) diced tomatoes for acidity and moisture
  • 2 cups vegetable broth for added flavor

Spices

  • 1 tablespoon chili powder adds warmth
  • 1 teaspoon cumin essential in Mexican cuisine

Seasoning

  • Salt and pepper to taste for seasoning

Garnish

  • Fresh cilantro for garnish

Instructions
 

  • In a pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  • Add minced garlic and chopped bell pepper. Cook for another 3-4 minutes.
  • Stir in the lentils, diced tomatoes, vegetable broth, chili powder, and cumin. Bring to a boil.
  • Reduce heat and simmer for about 30 minutes or until lentils are tender. Season with salt and pepper.
  • Garnish with fresh cilantro before serving.

Notes

You can adjust the spices according to your taste. Serve with rice or tortillas for a complete meal.
