Instructions
In a pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
Add minced garlic and chopped bell pepper. Cook for another 3-4 minutes.
Stir in the lentils, diced tomatoes, vegetable broth, chili powder, and cumin. Bring to a boil.
Reduce heat and simmer for about 30 minutes or until lentils are tender. Season with salt and pepper.
Garnish with fresh cilantro before serving.
Notes
You can adjust the spices according to your taste. Serve with rice or tortillas for a complete meal.
