- 8 ounces mushrooms sliced
- 1 medium onion sliced (the sweeter the better)
- 2 tablespoons olive oil
- salt and pepper to taste
- 4 tablespoons butter
- 4 slices bread of choice
- 1 cup gouda shredded
Preheat oven to 400°F.
Toss mushrooms and onions with olive oil, salt, and pepper on a baking sheet.
Roast for 20 minutes, stirring halfway.
Heat a skillet over medium heat.
Butter one side of each bread slice.
Place one slice butter-side down in the skillet.
Sprinkle half the gouda on the bread.
Add roasted mushrooms and onions.
Top with remaining gouda and the second bread slice, butter-side up.
Cook until golden brown, about 3-4 minutes per side.
Slice and serve hot.
