Ingredients
  

  • 8 ounces mushrooms sliced
  • 1 medium onion sliced (the sweeter the better)
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 4 tablespoons butter
  • 4 slices bread of choice
  • 1 cup gouda shredded

Instructions
 

  • Preheat oven to 400°F.
  • Toss mushrooms and onions with olive oil, salt, and pepper on a baking sheet.
  • Roast for 20 minutes, stirring halfway.
  • Heat a skillet over medium heat.
  • Butter one side of each bread slice.
  • Place one slice butter-side down in the skillet.
  • Sprinkle half the gouda on the bread.
  • Add roasted mushrooms and onions.
  • Top with remaining gouda and the second bread slice, butter-side up.
  • Cook until golden brown, about 3-4 minutes per side.
  • Slice and serve hot.

Notes

  • Use a sturdy bread for best results.
  • Adjust cooking time for desired crispiness.
