Ingredients
  

  • 1 pound lean ground beef
  • 1 yellow onion finely diced
  • 1 packet taco seasoning or 3 tablespoons homemade taco seasoning
  • ½ cup water
  • 1 tablespoon chili powder
  • 1 10 ounce can diced tomatoes with chilies (such as Rotel) or salsa
  • 1 ½ cups tomato sauce
  • 1 cup frozen corn kernels thawed
  • 1 15 ounce can red kidney beans, drained and rinsed
  • 1 9.25 ounce bag Fritos® corn chips, divided
  • 2 cups shredded Mexican cheese blend divided
  • Sour cream for serving optional

Instructions
 

  • Brown the ground beef with the diced onion in a large skillet over medium heat.
  • Drain excess fat and stir in the taco seasoning, water, and chili powder.
  • Add the diced tomatoes, tomato sauce, corn, and kidney beans. Simmer for 10 minutes.
  • Preheat the oven to 350°F (175°C).
  • Spread half of the Fritos in a baking dish. Top with half of the beef mixture and half of the cheese.
  • Repeat with the remaining Fritos, beef mixture, and cheese.
  • Bake for 10 minutes or until the cheese is melted.
  • Serve warm with sour cream if desired.

Notes

  • Use homemade taco seasoning for better flavor control.
  • Adjust the spice level by adding more or less chili powder.
  • Replace ground beef with ground turkey for a lighter option.
