Ingredients
  

For the Dressing

  • 1 cup plain Greek yogurt
  • ½ cup grated English cucumber, excess moisture squeezed out
  • 3 tablespoons fresh lemon juice
  • 2 clove garlic, peeled and grated
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper

For the Salad

  • 4 cups cooked chicken, chopped or shredded
  • 1 cup diced cucumber
  • ½ cup diced celery
  • ½ cup diced red onion
  • ½ cup crumbled feta cheese

Instructions
 

  • In a bowl, mix the Greek yogurt, grated cucumber, lemon juice, garlic, dill, parsley, salt, and black pepper to make the dressing.
  • In a large bowl, combine the cooked chicken, diced cucumber, diced celery, diced red onion, and feta cheese. Pour the dressing over the salad and mix well.

Notes

Serve chilled for a refreshing meal. You can add more herbs or spices to taste.
