½cupgrated English cucumber, excess moisture squeezed out

For the Salad
4cupscooked chicken, chopped or shredded
1cupdiced cucumber
½cupdiced celery
½cupdiced red onion
½cupcrumbled feta cheese
Instructions
In a bowl, mix the Greek yogurt, grated cucumber, lemon juice, garlic, dill, parsley, salt, and black pepper to make the dressing.
In a large bowl, combine the cooked chicken, diced cucumber, diced celery, diced red onion, and feta cheese. Pour the dressing over the salad and mix well.
Notes
Serve chilled for a refreshing meal. You can add more herbs or spices to taste.
