Ingredients
  

For the Sandwiches

  • 8 slices sandwich bread white, wheat, or sourdough work well
  • 4 tablespoons mayonnaise
  • 8 ounces sliced turkey deli or leftover roasted turkey
  • 6 ounces Monterrey Jack cheese sliced
  • ½ medium red onion thinly sliced
  • Salt and freshly ground black pepper to taste
  • 3 tablespoons honey Dijon mustard
  • 4 tablespoons butter softened

Instructions
 

  • Spread mayonnaise on one side of each slice of bread.
  • Layer turkey, cheese, onion, and mustard on the unbuttered side of half the slices, then top with the remaining slices.
  • Heat a skillet over medium heat and melt 1 tablespoon of butter.
  • Cook sandwiches for 2-3 minutes on each side until golden brown and cheese is melted.
