Ingredients
  

For the Salad

  • 1 can Canned Chickpeas Drained and rinsed
  • 1 medium Red Bell Pepper Diced
  • 2 medium Carrots Shredded
  • 1 medium Cucumber Sliced
  • ¼ head Red Cabbage Shredded
  • 2 stalks Green Onions Chopped

For the Dressing

  • ¼ cup Creamy Peanut Butter
  • 2 tablespoon Lime Juice
  • 2 tablespoon Soy Sauce or Tamari
  • 1 tablespoon Maple Syrup or Honey
  • 1 tablespoon Rice Vinegar
  • 1 inch Fresh Ginger Grated
  • 2 cloves Fresh Garlic Minced
  • 1 tablespoon Sriracha or Red Pepper Flakes Optional for heat
  • 1 tablespoon Toasted Sesame Oil
  • 2 tablespoon Water or Non-Alcohol Alternative
  • ¼ cup Dry Roasted Peanuts Chopped for topping

Instructions
 

  • In a large mixing bowl, combine chickpeas, red bell pepper, carrots, cucumber, red cabbage, and green onions.
  • In a separate bowl, whisk together peanut butter, lime juice, soy sauce, maple syrup, rice vinegar, ginger, garlic, sriracha, sesame oil, and water until smooth.
  • Pour the dressing over the salad and toss until well combined. Top with chopped peanuts before serving.

Notes

This salad can be customized with additional vegetables or proteins as desired.
