Ingredients
  

For the Filling

  • lbs lean ground beef or ground turkey
  • 4 medium zucchini, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup cottage cheese
  • 1 cup diced tomatoes with green chiles, drained
  • cups shredded cheddar cheese, divided
  • ½ cup grated Parmesan cheese

For the Seasoning

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoon chopped cilantro (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic, sauté until soft.
  • Add the ground beef or turkey to the skillet. Cook until browned. Drain any excess fat.
  • Stir in the diced zucchini, diced tomatoes, chili powder, cumin, paprika, salt, and black pepper. Cook for about 5 minutes until the zucchini is tender.
  • Remove from heat and stir in the cottage cheese, half of the cheddar cheese, and cilantro if using.
  • Transfer the mixture to a baking dish. Top with the remaining cheddar cheese and grated Parmesan cheese.
  • Bake in the preheated oven for 25 minutes or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes

You can add more vegetables like corn or black beans for extra flavor and nutrition.
