  • 2 cups Cooked rice White, brown, or cauliflower rice can be used.
  • 1 cup Bell pepper Feel free to mix in other veggies like snap peas or carrots.
  • 1 medium Onion Red or yellow onions are great choices.
  • 2 tablespoon Olive oil You can substitute with sesame oil for a nutty flavor.
  • 1 tablespoon Sesame seeds Toast them for extra flavor.
  • 2 tablespoon Green onions Chives can be a good alternative.

Instructions
 

  • Heat the olive oil in a skillet over medium heat.
  • Add the chicken and cook until it is browned and cooked through, about 7-10 minutes.
  • Stir in the bell pepper, onion, and pineapple chunks. Cook for another 5 minutes.
  • Pour in the teriyaki sauce and stir to combine. Cook for 2-3 minutes until heated through.
  • Serve the chicken mixture over cooked rice and garnish with sesame seeds and green onions.
