9 inch unbaked pie crust
Instructions
Preheat oven to 350°F (175°C).
Boil sweet potatoes until tender, about 15 minutes. Drain and peel.
Mash sweet potatoes in a large bowl.
Add eggs, nutmeg, sugar, evaporated milk, butter, vanilla, and cinnamon. Mix until smooth.
Pour filling into the unbaked pie crust.
Bake for 55 minutes, or until a knife inserted in the center comes out clean.
Cool before serving.
Notes
For a smoother texture, blend the filling in a food processor instead of mashing.
