Ingredients
  

  • 2 medium sweet potatoes
  • 2 large eggs
  • 0.5 teaspoon ground nutmeg
  • 1 cup white sugar
  • 1 cup evaporated milk
  • 0.5 cup butter softened
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 1 9 inch unbaked pie crust

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Boil sweet potatoes until tender, about 15 minutes. Drain and peel.
  • Mash sweet potatoes in a large bowl.
  • Add eggs, nutmeg, sugar, evaporated milk, butter, vanilla, and cinnamon. Mix until smooth.
  • Pour filling into the unbaked pie crust.
  • Bake for 55 minutes, or until a knife inserted in the center comes out clean.
  • Cool before serving.

Notes

For a smoother texture, blend the filling in a food processor instead of mashing.
