Ingredients
  

For the Sweet Potato Base

  • 4 cups peeled, cubed sweet potatoes
  • 2 large eggs, beaten
  • ½ cup white sugar
  • ½ cup milk
  • 4 tablespoons butter, softened
  • ½ teaspoon vanilla extract
  • ½ teaspoon salt

For the Topping

  • ½ cup brown sugar
  • cup all-purpose flour
  • 3 tablespoons butter, softened
  • ½ cup chopped pecans

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Boil sweet potatoes until tender, then drain and mash.
  • In a mixing bowl, combine mashed sweet potatoes with eggs, white sugar, milk, butter, vanilla extract, and salt.
  • Spread the sweet potato mixture into a greased baking dish.
  • In another bowl, mix brown sugar, flour, and butter for the topping. Stir in chopped pecans.
  • Sprinkle the topping over the sweet potato base.
  • Bake for 30 minutes or until the topping is golden brown.

Notes

This casserole can be made ahead of time and baked just before serving.
