Sweet Potato Bread

Ingredients
  

  • ½ cup sugar
  • ½ cup light brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 ¾ cups flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • cup whole milk
  • 1 cup sweet potatoes cooked and mashed

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  • In a large bowl, mix the sugar, brown sugar, and vegetable oil until well combined.
  • Add the eggs one at a time, mixing well after each addition.
  • In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  • Alternately add the dry ingredients and the milk to the sugar mixture, mixing until just combined.
  • Fold in the mashed sweet potatoes until evenly distributed.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Store the bread in an airtight container at room temperature for up to 3 days.
