For the Chicken

boneless, skinless chicken breasts or thighs
For the Sauce
1
cup
pineapple juice
1
can (8 oz)
pineapple chunks, drained
½
cup
soy sauce
½
cup
brown sugar

cloves
garlic, minced

tablespoon
cornstarch

tablespoons
cold water

red bell pepper
thinly sliced

teaspoon
ground ginger
Salt and pepper to taste
For Serving
Cooked rice

Green onions, sliced

Instructions
Place the chicken in the crockpot.
In a bowl, mix pineapple juice, soy sauce, brown sugar, garlic, ground ginger, salt, and pepper. Pour over the chicken.
Cook on low for 6 hours or until chicken is cooked through.
Remove chicken, shred it, and return to the crockpot.
In a small bowl, mix cornstarch and cold water. Stir into the crockpot and cook on high for 15 minutes to thicken the sauce.
Serve over cooked rice and garnish with green onions and sesame seeds.
Notes
You can adjust the sweetness by adding more or less brown sugar. Serve with steamed vegetables for a complete meal.
