Ingredients
  

For the Chicken

  • 2 lbs boneless, skinless chicken breasts or thighs

For the Sauce

  • 1 cup pineapple juice
  • 1 can (8 oz) pineapple chunks, drained
  • ½ cup soy sauce
  • ½ cup brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 1 red bell pepper thinly sliced
  • ½ teaspoon ground ginger
  • Salt and pepper to taste

For Serving

  • Cooked rice for serving
  • Green onions, sliced for garnish
  • Sesame seeds for garnish

Instructions
 

  • Place the chicken in the crockpot.
  • In a bowl, mix pineapple juice, soy sauce, brown sugar, garlic, ground ginger, salt, and pepper. Pour over the chicken.
  • Cook on low for 6 hours or until chicken is cooked through.
  • Remove chicken, shred it, and return to the crockpot.
  • In a small bowl, mix cornstarch and cold water. Stir into the crockpot and cook on high for 15 minutes to thicken the sauce.
  • Serve over cooked rice and garnish with green onions and sesame seeds.

Notes

You can adjust the sweetness by adding more or less brown sugar. Serve with steamed vegetables for a complete meal.
