In a skillet, heat olive oil over medium heat. Add chicken breasts and cook until no longer pink, about 5-7 minutes per side.
In a bowl, mix sweet chili sauce, soy sauce, garlic powder, ground ginger, salt, and pepper. Pour the sauce over the cooked chicken and cook for another 5 minutes, allowing the flavors to meld.
Remove chicken from heat and let it rest for a few minutes. Slice the chicken into strips.
To assemble the wraps, place some chicken, lettuce, carrots, cucumbers, and cilantro on each tortilla. Roll them up tightly.
Serve with lime wedges on the side.
