Instructions
Preheat your oven to 350°F (175°C).
In a bowl, mix flour, baking soda, and salt.
In another bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
Add the egg, vanilla extract, lemon zest, and lemon juice to the butter mixture and mix well.
Gradually blend the dry ingredients into the wet mixture.
Fold in the chopped strawberries.
Drop spoonfuls of dough onto a baking sheet.
Bake for 10-12 minutes or until the edges are lightly golden.
Allow to cool before serving.
Notes
For a stronger lemon flavor, add more lemon juice or zest.
