Ingredients
  

For the Cake

  • 3 pcs eggs
  • 1 box strawberry cake mix
  • ¾ cup vegetable oil
  • 1 cup diced fresh strawberries

For the Frosting

  • ½ cup strawberry jam
  • 2 cups heavy cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoon strawberry gelatin powder

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease and flour the cake pans.
  • In a mixing bowl, combine the strawberry cake mix, eggs, and vegetable oil. Mix until smooth.
  • Fold in the diced strawberries and pour the batter into the prepared cake pans.
  • Bake for 30 minutes or until a toothpick comes out clean. Let the cakes cool.
  • For the frosting, whip the heavy cream, powdered sugar, vanilla extract, and strawberry gelatin until stiff peaks form.
  • Spread strawberry jam between the layers of cake and frost the top and sides with the whipped cream mixture.
  • Decorate with additional fresh strawberries if desired. Serve and enjoy.

Notes

This cake can be made a day in advance. Keep it refrigerated until serving.
