For the Strawberry Crunch Coating
1cupGolden Oreos or vanilla sandwich cookies, crushed
1cupfreeze-dried strawberries or strawberry-flavored Jell-O powder
2–3tablespoonmelted butter
Instructions
In a mixing bowl, combine the softened cream cheese, heavy whipping cream, powdered sugar, and vanilla extract. Mix until smooth and creamy.
If using, swirl in the strawberry jam or puree for a pink effect.
For the crust, mix the crushed graham crackers, melted butter, and optional sugar together until well combined. Press the mixture into the bottom of a baking sheet to form a base layer.
Pour the cheesecake filling over the crust and spread evenly. Freeze for at least 2 hours until firm.
In a separate bowl, mix the crushed cookies and freeze-dried strawberries or Jell-O powder. Drizzle in the melted butter and stir until coated.
Once the cheesecake is firm, cut into bite-sized pieces and roll in the strawberry crunch coating.
Notes
You can use any type of cookies for the coating. Adjust the amount of strawberry flavoring to your taste.
