Ingredients
  

For the Cheesecake Filling

  • 16 oz cream cheese, softened
  • 1 cup heavy whipping cream or Cool Whip
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2 tablespoon strawberry jam or puree (optional, for pink swirl)

For the Crust (Optional Base Layer Inside)

  • 1 sleeve graham crackers or digestive biscuits, crushed
  • 3 tablespoon unsalted butter, melted
  • 1 tablespoon sugar (optional)

For the Strawberry Crunch Coating

  • 1 cup Golden Oreos or vanilla sandwich cookies, crushed
  • 1 cup freeze-dried strawberries or strawberry-flavored Jell-O powder
  • 2–3 tablespoon melted butter

Instructions
 

  • In a mixing bowl, combine the softened cream cheese, heavy whipping cream, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  • If using, swirl in the strawberry jam or puree for a pink effect.
  • For the crust, mix the crushed graham crackers, melted butter, and optional sugar together until well combined. Press the mixture into the bottom of a baking sheet to form a base layer.
  • Pour the cheesecake filling over the crust and spread evenly. Freeze for at least 2 hours until firm.
  • In a separate bowl, mix the crushed cookies and freeze-dried strawberries or Jell-O powder. Drizzle in the melted butter and stir until coated.
  • Once the cheesecake is firm, cut into bite-sized pieces and roll in the strawberry crunch coating.

Notes

You can use any type of cookies for the coating. Adjust the amount of strawberry flavoring to your taste.
