Ingredients
  

For the Pancakes

  • cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • cups milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

For the Cheesecake Filling

  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

For the Strawberry Topping

  • cups fresh strawberries, chopped
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice

Instructions
 

  • In a mixing bowl, combine flour, sugar, baking powder, and salt.
  • Add milk, egg, melted butter, and vanilla extract. Mix until smooth.
  • In another bowl, mix cream cheese, powdered sugar, vanilla extract, and milk until smooth.
  • In a separate bowl, combine strawberries, sugar, and lemon juice. Let sit for 10 minutes.
  • Heat a skillet over medium heat. Pour batter to form pancakes and add a spoonful of cheesecake filling on top. Cook until bubbles form, then flip.
  • Serve pancakes topped with strawberry mixture.

Notes

You can use frozen strawberries if fresh ones are not available. Adjust the sugar in the strawberry topping based on your taste.
