Ingredients
  

For the Filling

  • 6 pieces soft flour tortillas
  • 8 oz cream cheese room temperature
  • 2 tablespoons sour cream
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • ¾ cup sliced strawberries

For Coating

  • 1 tablespoon cinnamon
  • cup sugar

For Serving

  • 1 cup sliced strawberries

Instructions
 

  • In a mixing bowl, combine cream cheese, sour cream, sugar, vanilla extract, and sliced strawberries. Mix until smooth.
  • Spread the filling onto each tortilla, roll them up tightly, and secure with a toothpick if necessary.
  • Heat vegetable oil in a frying pan over medium heat. Fry the chimichangas until golden brown on all sides.
  • Mix cinnamon and sugar in a bowl. Roll the fried chimichangas in the mixture to coat.
  • Serve with additional sliced strawberries on the side.

Notes

For extra flavor, you can add more strawberries to the filling or drizzle with chocolate sauce before serving.
