Instructions
In a mixing bowl, combine cream cheese, sour cream, sugar, vanilla extract, and sliced strawberries. Mix until smooth.
Spread the filling onto each tortilla, roll them up tightly, and secure with a toothpick if necessary.
Heat vegetable oil in a frying pan over medium heat. Fry the chimichangas until golden brown on all sides.
Mix cinnamon and sugar in a bowl. Roll the fried chimichangas in the mixture to coat.
Serve with additional sliced strawberries on the side.
Notes
For extra flavor, you can add more strawberries to the filling or drizzle with chocolate sauce before serving.
