Ingredients
  

For the Beef Marinade:

  • 1 lb 450g beef sirloin or flank steak, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil

For the Sauce:

  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 garlic clove minced
  • 1 inch ginger minced

For the Noodles:

  • 8 oz 225g egg noodles or rice noodles
  • 1 bell pepper thinly sliced
  • 1 cup broccoli florets
  • 2 green onions chopped
  • Sesame seeds for garnish
  • Substitutions: Use tamari for a gluten-free option. Rice noodles are great for a wheat-free version. You can also use chicken or tofu instead of beef.

Instructions
 

Marinate the Beef

  • In a bowl, combine sliced beef with soy sauce, cornstarch, and vegetable oil. Let it marinate for at least 15 minutes.
  • Tip: This helps tenderize the meat and gives it a great sear when cooking.

Prepare the Sauce

  • In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sugar, rice vinegar, sesame oil, garlic, and ginger. Set aside.
  • Tip: Make this ahead to streamline the cooking process.

Cook the Noodles

  • Boil the noodles according to package instructions. Drain and set aside.
  • Tip: Toss with a drizzle of oil to prevent sticking.

Stir-Fry the Beef

  • Heat a large pan or wok over high heat. Add the marinated beef in a single layer. Sear for 1-2 minutes per side until browned and just cooked through. Remove and set aside.
  • Tip: Don’t overcrowd the pan—cook in batches if needed.

Cook the Veggies

  • In the same pan, add a touch more oil if needed. Stir-fry bell pepper and broccoli for 3-4 minutes until crisp-tender.
  • Tip: Keep the veggies slightly crunchy for texture.

Combine Everything

  • Add cooked noodles and beef back to the pan. Pour in the sauce. Toss everything together until well coated and heated through, about 2-3 minutes.

Garnish and Serve

  • Sprinkle with green onions and sesame seeds. Serve hot and enjoy!

Notes

  • Slice Against the Grain: This makes your beef more tender.
  • Double the Sauce: If you like extra saucy noodles, make 1.5x the sauce recipe.
  • Spice it Up: Add chili flakes or a dash of sriracha if you like heat.
  • Don’t Overcook Noodles: Keep them al dente so they don’t get mushy when stir-fried.
