Ingredients
  

For the Chicken

  • 1 lb boneless, skinless chicken breast

For the Dressing

  • 1 cup full-fat plain greek yogurt or skyr
  • 2 tablespoon lime juice
  • ¾ teaspoon ground cumin
  • ¾ teaspoon chili powder
  • ¾ teaspoon smoked paprika

For the Salad

  • ¾ cup black beans
  • ½ cup finely diced red bell pepper
  • ½ cup corn (fire-roasted preferred)
  • ¼ cup finely diced red onion
  • ¼ cup chopped cilantro

Instructions
 

  • Season the chicken breast with salt and pepper. Grill or cook in a skillet until fully cooked, about 15 minutes. Let it rest and then chop into bite-sized pieces.
  • In a mixing bowl, combine yogurt, lime juice, cumin, chili powder, smoked paprika, and optional cayenne. Mix well.
  • In a large bowl, combine the cooked chicken, black beans, red bell pepper, corn, red onion, and cilantro. Pour the dressing over the salad and toss to combine.

Notes

You can adjust the seasoning according to your taste. Feel free to add more vegetables or toppings as desired.
