Ingredients
  

For the Salad

  • 2 cups shredded rotisserie chicken
  • 1 can black beans drained and rinsed
  • 1 can sweet corn drained, frozen thawed corn can be used instead
  • 1 small red bell pepper
  • 1 small green bell pepper
  • 1 jalapeño seeded and diced
  • 4 green onions diced green and white parts
  • ¼ cup cilantro chopped

For the Chipotle Honey Lime Dressing

  • ½ cup greek yogurt
  • cup mayonnaise
  • 1 lime juice and zest of
  • 2 tablespoons chipotle adobo sauce the sauce that comes in jars of chipotle peppers
  • 2 teaspoons honey
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon freshly cracked pepper

Instructions
 

  • In a large bowl, combine the shredded chicken, black beans, corn, red bell pepper, green bell pepper, jalapeño, green onions, and cilantro.
  • In a separate bowl, whisk together the greek yogurt, mayonnaise, lime juice and zest, chipotle adobo sauce, honey, chili powder, paprika, cumin, salt, and pepper until smooth.
  • Pour the dressing over the salad and toss to combine.

Notes

Serve chilled or at room temperature. This salad can be made ahead of time and stored in the refrigerator.
