South Carolina Bird Dog Sandwiches

Ingredients
  

For the Sandwiches

  • 4 chicken tenders (grilled, fried, or baked)
  • 4 hoagie rolls or soft sandwich buns
  • ½ cup tangy South Carolina mustard-based BBQ sauce
  • ¼ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • ¼ cup chopped pickles (bread and butter or dill)
  • 1 small red onion, thinly sliced
  • ½ cup shredded lettuce or coleslaw
  • salt and pepper, to taste
  • hot sauce optional

Instructions
 

  • Cook the chicken tenders using your preferred method (grilled, fried, or baked). Season with salt and pepper.
  • In a small bowl, mix the mayonnaise, Dijon mustard, honey, and South Carolina mustard-based BBQ sauce.
  • Slice the hoagie rolls or sandwich buns and lightly toast them if desired.
  • Spread the mustard sauce mixture on both sides of the rolls.
  • Layer the cooked chicken tenders, pickles, red onion, and shredded lettuce or coleslaw on the rolls.
  • Add hot sauce if desired. Serve immediately.

Notes

For best results, serve fresh. You can also prepare the sauce ahead of time.
