Ingredients
  

For the Treat Base

  • 4 tablespoons unsalted butter
  • 10 ounces mini marshmallows
  • 6 cups crispy rice cereal

For the Filling

  • ½ cup crushed graham crackers
  • 1 cup mini marshmallows for filling
  • ½ cup chocolate spread or melted chocolate

For the Coating

  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil or butter

Miscellaneous

  • Nonstick spray or parchment paper for lining the pan

Instructions
 

  • Melt the butter in a saucepan over low heat. Add the mini marshmallows and stir until completely melted.
  • Remove from heat and stir in the crispy rice cereal until well coated. Let cool slightly.
  • Spread the mixture onto a lined surface, creating a rectangle. Press down to flatten.
  • Layer the crushed graham crackers, mini marshmallows, and chocolate spread over the rice mixture.
  • Roll the mixture tightly into a log shape and refrigerate until set.
  • While chilling, melt the chocolate chips with the coconut oil or butter. Dip the rolled treats into the melted chocolate.
  • Let the chocolate set before slicing into pieces. Serve and enjoy!

Notes

For extra flavor, add a pinch of salt to the melted marshmallows. You can also experiment with different types of chocolate.
