Ingredients
  

For the Bowl

  • 1 lb ground beef lean preferred
  • 1 lb red potatoes diced
  • 1–2 cups shredded cheddar or Colby Jack cheese
  • 1 cup chopped lettuce or mixed greens
  • 1 small onion diced
  • 1–2 tablespoons olive oil
  • Salt and black pepper to taste

For the Special Sauce

  • ½ cup mayonnaise
  • ¼ cup ketchup
  • 1 tablespoon yellow or Dijon mustard
  • ½ teaspoon Cajun seasoning adjust to taste

Instructions
 

  • In a skillet, heat olive oil over medium heat. Add diced potatoes and cook until tender, about 15 minutes.
  • Add ground beef to the skillet, season with salt and pepper, and cook until browned.
  • In a mixing bowl, combine mayonnaise, ketchup, mustard, and Cajun seasoning to make the special sauce.
  • Assemble the bowl with cooked potatoes, ground beef, cheese, lettuce, onion, and drizzle with special sauce.

Notes

You can customize the toppings based on your preferences. Add pickles or other vegetables if desired.
