  • 1.5 lbs stew beef (chuck or round)
  • 1.5 lbs baby potatoes scrubbed clean; halve larger ones

Sauce Ingredients

  • 1 cup beef broth low-sodium if preferred
  • 0.5 cup salted butter melted
  • 6 garlic cloves minced, or 1.5 teaspoon garlic powder in a pinch
  • 1 tablespoon Worcestershire sauce adds depth and umami
  • 1 teaspoon smoked paprika for a subtle smoky flavor
  • 1 teaspoon dried thyme or rosemary for a fresh twist
  • 1 teaspoon kosher salt plus more to taste
  • 0.5 teaspoon black pepper

Garnish

  • fresh parsley optional, for garnish

Instructions
 

  • Place the stew beef and baby potatoes in the slow cooker.
  • In a small bowl, mix the beef broth, melted butter, minced garlic, Worcestershire sauce, smoked paprika, thyme, salt, and black pepper.
  • Pour the sauce over the beef and potatoes in the slow cooker.
  • Cover and cook on low for 6 hours or until the beef is tender and the potatoes are cooked through.
  • Garnish with fresh parsley before serving if desired.

Notes

For extra flavor, you can brown the beef in a skillet before adding it to the slow cooker.
