For the Beef

For the Potatoes

  • 2 pounds Yukon Gold Potatoes Consider sweet potatoes for a sweeter flavor.

For the Garlic Butter Sauce

  • 6 cloves Garlic Fresh garlic gives the richest flavor.
  • 1 cup Butter Preferably Kerrygold. Substitute with plant-based butter for a dairy-free alternative.
  • 2 cups Beef Broth Pick a gluten-free version if necessary.

For Garnish

  • 1 cup Fresh Parsley Feel free to swap with your favorite fresh herb.

Instructions
 

  • Place the beef chuck roast in the slow cooker.
  • Add the chopped Yukon gold potatoes around the beef.
  • In a saucepan, melt the butter and sauté the minced garlic until fragrant, then pour it over the beef and potatoes.
  • Pour the beef broth into the slow cooker.
  • Cover and cook on low for 8 hours or until the beef is tender.
  • Garnish with fresh parsley before serving.
