Ingredients
  

For the Pasta

  • 8 ounces Rotini Pasta Substitute with penne or shells if desired.

For the Crunch

  • 1 cup Dill Pickles Can substitute with sweet pickles.
  • 1 tablespoon Fresh Dill Can use dried dill (reduce amount to one-third).
  • ½ cup White Onion Green onions can be used as a substitute.

For the Creamy Dressing

  • 1 cup Colby Jack Cheese Cheddar is a good alternative.
  • ½ cup Mayonnaise Greek yogurt can be used for a lighter option.
  • ½ cup Sour Cream Plain yogurt can be used as a substitute.
  • cup Dill Pickle Brine Adjust the amount to suit taste.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Black Pepper Adjust to taste.

Instructions
 

  • Cook the rotini pasta according to package instructions. Drain and set aside.
  • In a mixing bowl, combine the cooked pasta, dill pickles, fresh dill, and white onion.
  • In another bowl, mix together the Colby Jack cheese, mayonnaise, sour cream, dill pickle brine, salt, and black pepper.
  • Pour the creamy dressing over the pasta mixture and toss to coat.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

You can customize the salad by adding other vegetables or proteins as desired.
