For the Glaze
2 ½

freshly squeezed orange juice
from one large, organic orange

Instructions
Preheat your oven to 350°F (175°C) and grease a cake pan.
In a mixing bowl, combine the eggs and sugar. Beat until light and fluffy.
Add the flour, baking powder, butter, yogurt, orange pieces, and vanilla extract. Mix until well combined.
Pour the batter into the prepared cake pan and smooth the top.
Bake for 45 minutes, or until a toothpick inserted comes out clean.
While the cake is baking, prepare the glaze by mixing orange juice and sugar.
Once the cake is done, allow it to cool slightly before drizzling the glaze over the top.
Notes
This cake is best served warm or at room temperature. It pairs well with a cup of tea or coffee.
