Ingredients
  

For the Cake

  • 3 large eggs
  • 1 ⅛ cups sugar
  • 2 cups all-purpose flour
  • 2 ½ teaspoon baking powder OR 1 packet Italian Pane Degli Angeli vanilla baking powder
  • cup salted butter, softened
  • cup plain Greek yogurt sour cream also works
  • 1 large orange washed and cut into pieces, seeds removed but peel kept
  • 1 teaspoon vanilla extract only use if using plain baking powder

For the Glaze

  • 2 ½ oz freshly squeezed orange juice from one large, organic orange
  • 3 tablespoons sugar

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a cake pan.
  • In a mixing bowl, combine the eggs and sugar. Beat until light and fluffy.
  • Add the flour, baking powder, butter, yogurt, orange pieces, and vanilla extract. Mix until well combined.
  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake for 45 minutes, or until a toothpick inserted comes out clean.
  • While the cake is baking, prepare the glaze by mixing orange juice and sugar.
  • Once the cake is done, allow it to cool slightly before drizzling the glaze over the top.

Notes

This cake is best served warm or at room temperature. It pairs well with a cup of tea or coffee.
