  • 1 each onion, thinly sliced
  • 1 teaspoon fajita seasoning
  • 2 tablespoons olive oil

Assembly

  • 8 large flour tortillas
  • 1 cup shredded Monterey Jack cheese

To Serve

  • ¼ cup sour cream (for dipping)
  • Fresh cilantro, chopped (for garnish)

Instructions
 

  • In a skillet, heat olive oil over medium heat. Add bell pepper and onion, sauté until soft.
  • Add shrimp, crab meat, and fajita seasoning. Stir until heated through.
  • Place a portion of the filling on each tortilla, sprinkle with cheese, and roll tightly.
  • Heat the roll-ups in the skillet until the tortillas are golden and the cheese melts.
  • Serve with sour cream and garnish with fresh cilantro.
