Ingredients
  

For the Chicken

  • 1.5 pounds boneless skinless chicken breast, cubed

For the Vegetables

  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 cup broccoli florets

For the Sauce

  • ½ cup unsalted cashews
  • 2 tablespoons olive oil
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions
 

  • Preheat your oven to 400°F (200°C). Prepare a sheet pan with cooking spray or parchment paper.
  • In a mixing bowl, combine the chicken, bell peppers, broccoli, olive oil, soy sauce, honey, rice vinegar, garlic, ginger, cornstarch, and water. Mix well to coat.
  • Spread the mixture evenly on the prepared sheet pan.
  • Bake for 25 minutes or until the chicken is cooked through and the vegetables are tender.
  • Remove from the oven, sprinkle with cashews, and serve warm.

Notes

You can add your choice of vegetables to this recipe. Adjust the cooking time if needed based on the vegetables used.
