Ingredients
  

For the Salad

  • 12 oz tortellini, fresh or frozen
  • 6 oz salami, diced
  • 8 oz mozzarella cheese, cubed
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup olives, sliced optional
  • ½ cup Italian dressing

For Garnish

  • fresh basil leaves for garnish, optional

Instructions
 

  • Cook the tortellini according to package instructions. Drain and set aside.
  • In a large mixing bowl, combine the cooked tortellini, salami, mozzarella, cherry tomatoes, cucumber, red bell pepper, red onion, and olives.
  • Add the Italian dressing and toss to coat. Season with salt and pepper to taste.
  • Garnish with fresh basil leaves if desired. Serve immediately or chill before serving.

Notes

This salad can be made ahead of time and stored in the refrigerator. Feel free to add or substitute your favorite vegetables.
