Ingredients
  

For the Chicken Rolls

  • 4 pieces Chicken breasts (boneless, skinless)
  • 2 cups Fresh spinach (chopped)
  • 1 cup Feta cheese (crumbled)
  • ½ cup Sun-dried tomatoes (drained and chopped)
  • 2 tablespoons Olive oil
  • 2 cloves Garlic (minced)
  • to taste Salt and pepper

For the Seasoning

  • 1 teaspoon Italian seasoning or dried herbs optional
  • to taste Fresh herbs (like basil or parsley) for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix the spinach, feta cheese, sun-dried tomatoes, minced garlic, olive oil, salt, and pepper.
  • Place the chicken breasts on a flat surface and pound them to an even thickness.
  • Spoon the spinach mixture onto each chicken breast, then roll them up tightly and secure with toothpicks.
  • Arrange the rolled chicken in a baking dish, sprinkle with Italian seasoning, and add more salt and pepper if desired.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  • Let the chicken rest for a few minutes before slicing. Garnish with fresh herbs before serving.

Notes

You can substitute the feta with other cheeses if preferred. Adjust the herbs based on your taste.
