Instructions
Preheat the oven to 400°F (200°C).
Slice the sweet potatoes into ¼-inch thick rounds.
Toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika.
Arrange the rounds on a baking sheet in a single layer.
Roast for 20-25 minutes, flipping halfway through, until tender and lightly browned.
Remove from the oven and sprinkle with crumbled feta cheese.
Drizzle with honey and garnish with chopped parsley before serving.
Notes
For a variation, try adding a pinch of chili flakes for a spicy kick.
