Ingredients
  

  • 2 large sweet potatoes, washed and scrubbed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ¾ cup crumbled feta cheese
  • ¼ cup honey
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Slice the sweet potatoes into ¼-inch thick rounds.
  • Toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika.
  • Arrange the rounds on a baking sheet in a single layer.
  • Roast for 20-25 minutes, flipping halfway through, until tender and lightly browned.
  • Remove from the oven and sprinkle with crumbled feta cheese.
  • Drizzle with honey and garnish with chopped parsley before serving.

Notes

For a variation, try adding a pinch of chili flakes for a spicy kick.
