These Ritz Cracker Christmas Cookies are the perfect quick and festive no-bake holiday treat! Made with buttery crackers, creamy peanut butter, white chocolate, and milk chocolate, they deliver the ideal mix of salty, sweet, crunchy, and creamy. Decorate them with sprinkles or crushed candy canes for a cheerful, gift-worthy cookie that’s ready in minutes.

Ingredients
  

  • 40 Ritz crackers or similar buttery round crackers
  • 1 cup creamy peanut butter
  • 1 cup white chocolate chips or melting wafers
  • 1 cup milk chocolate chips or melting wafers
  • Sprinkles crushed candy canes, or holiday decorations

Instructions
 

  • Line a baking sheet with parchment or wax paper.
  • Spread a thin layer of peanut butter on the flat side of each cracker.
  • Place half of the peanut-butter-coated crackers onto the prepared baking sheet.
  • Melt white chocolate in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
  • Spoon, spread, or pipe the melted white chocolate over the crackers on the baking sheet.
  • Top each with the remaining peanut-buttered crackers, peanut butter side down, forming sandwich cookies.
  • Melt milk chocolate using the same microwave method.
  • Dip each sandwich cookie halfway into the melted milk chocolate, allowing excess to drip off.
  • Immediately decorate with sprinkles, crushed candy canes, or festive toppings.
  • Place cookies back on the baking sheet and refrigerate 15–20 minutes, or until chocolate is firm.

Notes

  • Use a piping bag for neater white chocolate application.
  • Melting wafers produce smoother dipping chocolate than chips.
  • Swap peanut butter for almond, sunflower, or cookie butter if preferred.
  • Store cookies in an airtight container in the refrigerator for up to 2 weeks.
  • Freeze for up to 3 months — thaw in the fridge before serving.
