Ingredients
  

For the Stroganoff

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 teaspoon paprika
  • 1 tablespoon Dijon mustard
  • 1 cup chicken broth
  • 1 cup sour cream

For Serving

  • cooked egg noodles or rice for serving
  • Fresh parsley, chopped for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add diced onion and cook until soft.
  • Add garlic and chicken, cooking until the chicken is browned. Stir in mushrooms and paprika.
  • Pour in chicken broth and bring to a simmer. Cook for 10 minutes.
  • Reduce heat and stir in sour cream and Dijon mustard. Cook until heated through. Season with salt and pepper.
  • Serve over cooked egg noodles or rice and garnish with parsley.

Notes

You can adjust the seasoning to taste. This dish pairs well with a side salad.
