Ingredients
  

For marinating the chicken

  • 200 g chicken breast, cut into pieces
  • ½ teaspoon ginger garlic paste
  • ¼ teaspoon turmeric powder
  • ½ teaspoon coriander powder
  • 1 teaspoon red chili powder

For cooking the rice

  • 2 cups basmati rice
  • 8 cups water
  • 1 tablespoon oil
  • 2 tablespoon salt
  • 2 tablespoon fresh mint leaves

For the masala base

  • 1 medium onion
  • 2 large tomatoes
  • 1 tablespoon ginger garlic paste
  • 2 tablespoon unsalted butter
  • ½ teaspoon cumin seeds
  • 1 tablespoon kasuri methi
  • 2 tablespoon yogurt
  • ¼ cup water (if needed)
  • 1 teaspoon garam masala powder

For garnish

  • ¼ cup fresh mint leaves and/or cilantro
  • cup crispy fried onions

Instructions
 

  • Marinate the chicken with ginger garlic paste, turmeric, coriander powder, red chili powder, and salt. Let it sit for 30 minutes.
  • In a pot, heat oil and cook the rice with water, salt, mint leaves, cloves, cinnamon stick, cardamom pods, and bay leaf until done.
  • For the masala base, sauté onion, tomatoes, ginger garlic paste, cashews, and spices in butter until soft.
  • Add marinated chicken to the masala and cook until chicken is done. Stir in yogurt, kasuri methi, garam masala, and water if needed.
  • Layer the cooked rice over the chicken masala and let it simmer for a few minutes.
  • Garnish with fresh mint leaves, cilantro, and crispy fried onions before serving.

Notes

You can adjust the spice levels according to your taste. Serve with raita or salad.
