For the Shortbread Base

butter, softened

granulated sugar

all-purpose flour
For the Rhubarb Filling

rhubarb, diced

eggs

baking powder
Instructions
Preheat your oven to 350°F (175°C). Grease and prepare your baking pan.
In a mixing bowl, combine softened butter, granulated sugar, and flour. Press this mixture into the bottom of the prepared pan.
In another bowl, mix the rhubarb, eggs, sugar, flour, and baking powder until well combined. Pour this filling over the shortbread base.
Bake in the preheated oven for 40 minutes or until the filling is set and lightly golden.
Allow to cool before cutting into bars.
Notes
These bars can be served warm or chilled. You can add a dusting of powdered sugar on top if desired.
