Ingredients
  

For the Shortbread Base

  • 1 cup butter, softened
  • ½ cup granulated sugar
  • 2 cups all-purpose flour

For the Rhubarb Filling

  • 3 cups rhubarb, diced
  • 3 eggs
  • 1 ½ cups sugar
  • cup all-purpose flour
  • ½ teaspoon baking powder

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and prepare your baking pan.
  • In a mixing bowl, combine softened butter, granulated sugar, and flour. Press this mixture into the bottom of the prepared pan.
  • In another bowl, mix the rhubarb, eggs, sugar, flour, and baking powder until well combined. Pour this filling over the shortbread base.
  • Bake in the preheated oven for 40 minutes or until the filling is set and lightly golden.
  • Allow to cool before cutting into bars.

Notes

These bars can be served warm or chilled. You can add a dusting of powdered sugar on top if desired.
