For the Crust

all-purpose flour

granulated sugar

unsalted butter

For the Filling

whole milk

rhubarb
chopped into small pieces

granulated sugar
for rhubarb topping

teaspoon
vanilla extract
Instructions
Preheat your oven to 350°F (175°C) and grease a baking dish.
In a mixing bowl, combine flour, sugar, and butter. Mix until crumbly.
Press the mixture into the bottom of the baking dish to form the crust.
In another bowl, whisk together eggs, milk, sugar, and vanilla extract.
Add the chopped rhubarb to the egg mixture and stir to combine.
Pour the filling over the crust in the baking dish.
Bake for 40 minutes or until the filling is set.
Allow to cool before cutting into bars.
Notes
Serve chilled or at room temperature. You can add whipped cream on top for extra flavor.
