Ingredients
  

For the Crust

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar for crust
  • ½ cup unsalted butter cold and cut into small pieces

For the Filling

  • 2 large eggs
  • 1 cup whole milk
  • 1 ½ cups rhubarb chopped into small pieces
  • ½ cup granulated sugar for rhubarb topping
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a baking dish.
  • In a mixing bowl, combine flour, sugar, and butter. Mix until crumbly.
  • Press the mixture into the bottom of the baking dish to form the crust.
  • In another bowl, whisk together eggs, milk, sugar, and vanilla extract.
  • Add the chopped rhubarb to the egg mixture and stir to combine.
  • Pour the filling over the crust in the baking dish.
  • Bake for 40 minutes or until the filling is set.
  • Allow to cool before cutting into bars.

Notes

Serve chilled or at room temperature. You can add whipped cream on top for extra flavor.
