Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, combine flour, cocoa powder, baking soda, and salt.
In another bowl, cream together the butter and sugar until smooth. Add the egg, vanilla extract, and red food coloring. Mix well.
Gradually add the dry ingredients to the wet ingredients, mixing until combined.
Roll the dough into balls and place them on the prepared baking sheet. Make a small indentation in each ball.
Bake for 10 minutes. Let them cool.
For the filling, mix cream cheese, powdered sugar, and vanilla extract until smooth. Fill each indentation with the cream cheese mixture.

These cookies can be stored in an airtight container for up to a week.
