Ingredients
  

For the Crust and Topping

  • ½ cup butter, melted
  • ½ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup old-fashioned whole-rolled oats don’t use quick cook or instant
  • 1 pinch salt

For the Filling

  • 1 cup raspberry preserves seeded or seedless will work

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a baking dish.
  • In a mixing bowl, combine melted butter, granulated sugar, brown sugar, and vanilla extract. Mix until smooth.
  • Add flour, oats, and salt to the mixture. Stir until combined.
  • Press half of the mixture into the bottom of the baking dish. Spread raspberry preserves over the top.
  • Sprinkle the remaining oat mixture over the raspberry preserves.
  • Bake for 25 minutes or until the top is golden brown. Allow to cool before cutting into bars.

Notes

These bars can be stored in an airtight container for up to a week.
