Ingredients
  

For the Pudding

  • ¼ cup chia seeds
  • 1 cup unsweetened almond milk or milk of choice
  • 2 tablespoons pure maple syrup
  • ½ teaspoon vanilla extract
  • ½ cup fresh or frozen raspberries plus more for topping

Optional Toppings

  • sliced almonds or chopped nuts for topping
  • shredded coconut for topping
  • additional raspberries or mixed berries for topping
  • extra drizzle of maple syrup for topping

Instructions
 

  • In a bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Stir well.
  • Add raspberries and mix gently. Let it sit for at least 5 minutes until it thickens.
  • Serve in bowls and top with your choice of sliced almonds, shredded coconut, additional berries, and a drizzle of maple syrup.

Notes

You can adjust the sweetness by adding more or less maple syrup. This pudding can be made ahead of time and stored in the fridge.
