Ingredients
For the Pudding

chia seeds

unsweetened almond milk or milk of choice

pure maple syrup

teaspoon
vanilla extract

fresh or frozen raspberries plus more for topping
Optional Toppings
sliced almonds or chopped nuts

shredded coconut

additional raspberries or mixed berries

extra drizzle of maple syrup

Instructions
In a bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Stir well.
Add raspberries and mix gently. Let it sit for at least 5 minutes until it thickens.
Serve in bowls and top with your choice of sliced almonds, shredded coconut, additional berries, and a drizzle of maple syrup.
Notes
You can adjust the sweetness by adding more or less maple syrup. This pudding can be made ahead of time and stored in the fridge.
