Ingredients
  

  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • ½ cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ cup granulated sugar for rolling
  • ½ teaspoon ground cinnamon for rolling

Instructions
 

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a bowl, cream together butter and sugar until light and fluffy.
  • Add the egg, pumpkin puree, and vanilla extract. Mix well.
  • In another bowl, whisk flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
  • Gradually add the dry ingredients to the wet mixture, mixing until combined.
  • In a small bowl, mix ¼ cup sugar and ½ teaspoon cinnamon for rolling.
  • Scoop dough into 1-inch balls, roll in the cinnamon-sugar mixture, and place on baking sheets.
  • Bake for 10-12 minutes or until edges are set. Let cool before serving.

Notes

  • Store cookies in an airtight container for up to 5 days.
  • For a softer texture, slightly underbake the cookies.
