For the Stir Fry

carrot, sliced thin on a bias

extra virgin olive oil
For the Sauce

reduced-sodium soy sauce
¼
cup
rice wine vinegar

tablespoon
sugar or honey
1
teaspoon
grated fresh ginger

tablespoon
cornstarch
1
tablespoon
cold water
Instructions
In a large skillet, heat the sesame oil and olive oil over medium heat.
Add the frozen potstickers and cook for about 5 minutes, turning occasionally.
Pour in the water and cover the skillet. Let steam for 5 more minutes until heated through.
Add the mushrooms, broccoli, green beans, carrot, and onion. Stir and cook for another 5 minutes until vegetables are tender.
For the sauce, mix soy sauce, rice wine vinegar, sugar or honey, ginger, cornstarch, and cold water in a bowl. Pour over the stir fry.
Stir everything together and cook for an additional 2-3 minutes until the sauce thickens.
Garnish with sesame seeds and green onions before serving.
Notes
This dish can be made with your favorite vegetables. Adjust the sauce to taste.
