Ingredients
  

For the Bake

  • 4 large eggs
  • 1 cup cooked potatoes, diced
  • ½ cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives
  • ¼ cup milk or dairy-free alternative
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional Seasoning

  • pinch garlic powder optional

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a bowl, whisk together the eggs, milk, salt, pepper, and garlic powder if using.
  • Add the diced potatoes, cheddar cheese, and chives to the egg mixture. Stir until combined.
  • Pour the mixture into a greased baking dish.
  • Bake for 30 minutes or until the top is golden and set.
