Ingredients
  

For the Filling

  • 1 can (20 oz) crushed pineapple drained
  • 8 oz cream cheese softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract

For the Crunch Topping

  • 1 cup pecans chopped
  • 1 cup crushed graham crackers
  • ½ cup unsalted butter melted
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the drained crushed pineapple, softened cream cheese, granulated sugar, and vanilla extract. Mix until smooth.
  • In another bowl, mix together the chopped pecans, crushed graham crackers, melted butter, brown sugar, and cinnamon to create the crunch topping.
  • Spread the pineapple mixture into a baking dish and top with the crunch mixture.
  • Bake for 30 minutes or until the top is golden brown.
