Ingredients
  

For the Cake

  • 1 box yellow cake mix
  • 1 can (20 oz) crushed pineapple, with juice
  • ½ cup unsalted butter, melted

For the Topping

  • 1 cup powdered sugar
  • 1 package (8 oz) cream cheese, softened
  • 1 tub (8 oz) whipped topping (e.g., Cool Whip)
  • ½ cup shredded coconut (optional)
  • ¼ cup chopped pecans (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C). Prepare a 9x13 inch baking dish by greasing it.
  • In a mixing bowl, combine the yellow cake mix, crushed pineapple with juice, and melted butter. Mix until well combined.
  • Pour the batter into the prepared baking dish and bake for 30 minutes or until a toothpick inserted comes out clean.
  • While the cake cools, prepare the topping by mixing the powdered sugar, softened cream cheese, and whipped topping until smooth.
  • Once the cake is cool, spread the topping over the cake. Optionally, sprinkle shredded coconut and chopped pecans on top.

Notes

For a creamier texture, use full-fat cream cheese. You can adjust the amount of coconut and pecans based on your preference.
