Instructions
In a mixing bowl, combine all the batter ingredients and mix until smooth.
Heat the vegetable oil in a frying pan over medium heat. Dip each pineapple ring in the batter and carefully place it in the hot oil. Fry until golden brown on both sides.
Remove the fritters and place them on paper towels to drain excess oil. Dust with the cinnamon and sugar mixture before serving.
Notes
These fritters can be served warm and are great with a scoop of ice cream.
